Runner Bean Stir Fry
Tasty yet simple - one of the joys of the stir fry is that you can experiment with ingredients all you like! Here's one including runner beans.
Method
Prepare the runner beans. Cut off the ends. Use a vegetable peeler to remove the stringy bits from each side. Then chop diagonally into slices.
Chop the rest of the veg into thin pieces.
Prepare the sauce by mixing all the ingredients together.
Heat a splash of oil in a wok.
When it’s hot add the onions, then the runner beans, the rest of the veg and water chestnuts.
Fry on a high heat for about 3 minutes. When the veggies become tender add the sauce and stir into the veg.
Cook for another minute or 2 until the sauce thickens. Then it’s ready. Serve on its own or with rice or noodles, topped with some sesame seeds and chilli sauce.
Dinner for the whole family.

Ingredients
Serves 2 (or 4 if served with rice or noodles)
Runner beans (approx 10)
2 or 3 carrots
1/2 red pepper
1/2 yellow pepper
1 small head of broccoli
1/2 red onion
1 small can water chestnuts
Sauce:
3 Tbsp soy sauce
2 Tbsp sesame oil
2 garlic cloves, crushed
1 Tbsp grated ginger
1 tsp sriracha
1 tsp maple syrup
1/3 cup veg stock
2 tsps cornflour
