Grate the courgettes. Add salt and leave to sit for 15 mins.
Pre heat the oven to 180.
Using a piece of cloth, squeeze out the excess water.
Put the grated courgettes into a large bowl. Add the flour and mix. Then add all the other ingredients and mix well.
Spoon the batter onto a baking tray to make 12 evenly sized fitters.
Bake for 25 - 30 mins, turning half way, until they start to brown.
Serve with your favourite dip!
