Courgette Pasta and Pesto
Great as a light dinner or lunch, this dish is healthy and packed with flavour!
Method
To make the pesto you simply blend all the ingredients together. (Alternatively you can just use store bought pesto for an even quicker prep time).
Then prepare your courgettes. You will need a spiraliser for this (which, if you don’t have one already, is such a great kitchen gadget that you can pick up pretty cheaply).
Spiralize your courgettes into noodles.
In a large frying pan, heat a splash of oil. Add the garlic and cook for a few seconds then add the courgettes. Cook for a couple of minutes until they are warmed through then season to taste.
Pour the pesto onto the courgettes and top with sun blushed tomatoes, shaved Parmesan and some pine nuts.

Ingredients
Pesto recipe:
2 handfuls of basil leaves
1/4 cup of olive oil
Juice of 1 lemon
1/4 cup pine nut
1 garlic clove
2 Tbsp nutritional yeast
1 tsp salt
1 tsp pepper
Courgette pasta recipe:
2 x courgettes per person
1 x cloves of garlic per courgette (minced)
Other ingredients:
Sun-blushed tomatoes
Parmesan
Extra pine nuts
