Mushroom, Spinach and Tofu Wraps
The perfect lunch box wrap!
Method
First prepare the tofu. (A little tofu tip.. I buy extra form tofu then freeze it and defrost before using it. This gives a really nice, even more firm texture.)
Break the tofu into chunks. Sprinkle with nutritional yeast, salt, pepper and oil, then mix together.
Heat some oil in a frying pan and fry the tofu until golden and slickly crispy on the outside. Set this aside.
In a separate pan heat a splash of oil, add the mushrooms and cook on a high ish heat until they start to brown. Then add the spinach. Turn off the heat and let the leaves wilt. Then add the cooked tofu to the mushrooms and spinach. Season to taste. And drizzle with truffle oil. (I often eat this dish in a bowl by itself but for the convenience of a pack lunch I’ll be making it into a wrap).
Spread some Mayo on your wrap. Add the filling and roll it up. And voilà, your delicious lunch is ready to go!

150 g extra firm tofu
150g chestnut mushrooms, sliced
100g fresh spinach
2 Tbsp nutritional yeast
Truffle oil (optional but highly recommended!)
Salt & pepper
