Asparagus on Toast

Simple but so effective. Great for breakfast, lunch or dinner!

Method

Recipe serves 2:


In a large frying pan heat some oil.
Add the garlic, then the mushrooms. Fry until the mushrooms are nicely browned. Set aside.
Heat a splash more oil and fry the asparagus with a little salt and pepper until tender.
Butter the toast. Cut the remaining garlic clove in half and rub over the buttered toast.
Then add the mushrooms and asparagus. Finish with a squeeze of lemon, a sprinkle of shaved Parmesan and a drizzle of balsamic glaze.

Cooking time: 15mins

Ingredients

2 bunches of asparagus


2 cloves of garlic, thinly sliced (+ 1 more clove for the garlic toast)


150g chestnut or flat mushrooms - chopped


4 thick slices of seeded granary bread (toasted)


Parmesan / Vegan Parmesan 


Balsamic glaze 


A slice of lemon
