Courgette & Radish Salad
Fresh young courgettes are so sweet and crisp, we like 'em raw in a simple salad.
Method
Don't worry about quantities too much here. Use as much as you think you'll need.
As a guide, for 1 person we used 1 small courgette, 2 radish and 75g edamame, plus the juice of 1 small lime.
1: Cook the edamame beans in boiling water if you're using frozen... approx. 4 minutes.
2: Wash the courgette, then use a spiralizer or vegetable peeler to cut into thin ribbons, and arrange on a large plate or serving platter.
3: Squeeze the lime juice over the courgette.
4: Add the edamame beans and mix through the courgette with your hands, taking care not to break the ribbons.
5: Wash and thinly slice the radish, and sprinkle over the salad.
6: Drizzle with a little good quality extra virgin olive oil, and season to taste with salt and pepper.
